Mushrooms are one of those things that people either love or hate. There’s not much of a middle ground. I happen to love them, hence this collection of recipes. Many of them are vegan or vegetarian as well. Mushrooms add a “meatiness” lacking in those restrictions, so…bonus!
Mushrooms bring flavor, color, texture, and depth to any dish you make. I can’t imagine any sauce or gravy without them, or at least a rich mushroom stock added to a soup or stew.
Luckily, these days, many stores stock a variety of the more exotic kinds, so the white button is no longer your only choice.
Don’t get me wrong, though. I like the white button. But I began foraging wild mushrooms years ago, and the first time I came upon a patch of golden Chanterelles, it really did take my breath away. It was like finding buried treasure. I have gone back to that same place for years now, and I’ll take its location to the grave!
